How do we avoid soggy Tacos?

We treat our tortillas to a generous massage with annato infused oil before heating them up, this way they are "sealed", making them less vulnerable to humidity. We also take advantage of the "original and photocopy" ancient technique that is used by the wise Mexican Taqueros since forever; each taco is assembled with two sealed tortillas, which make them extra strong and extra delicious.
